Last year on our vacation we went to a restaurant for lunch that we all love and always go to. I usually get their shrimp or oyster po-boy but they didn’t have it on the menu... It was all I think about so here’s where this dinner popped into my head.
Traditional bang bang shrimp is breaded, deep fried and tossed in a mayo based sauce. I made a lightened up version for tonight’s dinner. I love bang-bang shrimp but never made it because mayonnaise creeps me out when warm so I substituted Greek yogurt instead. It’s also another nice way to add in additional protein.
Don’t let the make ahead part fool you-This is a quick meal. It took about 5 minutes last night to prep the slaw and sauce and about 10 minutes to cook today.
