So my sister and mom have made a variation of the Cracker Barrel hash brown casserole for several family brunches we have had and each time I feel like I can eat the whole entire pan myself- it’s my favorite!
So that is where the idea for this came from. Except this one also packs a ton more protein and even some veggies. You have two baking options; I baked mine in large silicone muffin liners so it made easy meal prep for the week OR you can bake it in a 9x13 pan.
I added a couple of scrambled eggs to the side for extra protein and it made for an easy and very yummy breakfast meal prep for the week!
