I know I’ve talked about this before but I think it’s worth a reminder. One of the things that typically takes up time trying to get a meal on the table is cooking your protein source. As you have noticed a lot of my quicker recipes take advance of pre-cooked meat, especially chicken. One of the ways we do this in our house is my husband will smoke 1 or more chickens at a time. Then we shred the meat, bag it and freeze it until we need it. This makes it so much easier for those crazy nights.
Now I personally do not know how to use a smoker so sometimes I will put a whole chicken in the crockpot over night and then shred it in the morning.
Another no-cook option is to take advantage of rotisserie chickens at the store.
So next time your facing some busy days or weeks try and prep your protein ahead of time and you’ll see how easy it makes it to throw together dinner. A great example of this will be my Chicken Enchilada Soup that will be posted on Thursday.
