Chimichurri style marinated steak topped with quick pickled radishes/red onions and cotija cheese

Sooo I think it is becoming apparent that we love tacos in this house so I keep trying to get creative. I also love tacos because I find them to be a quick meal.

This one does take a little prep (not much) but it’s a great one to make on the weekend and have prepped for a busy week day night.

This one came to mind because I love radishes and onions and my sister just sent a fresh container of homemade pickles this week and I thought “hmmm pickled veggies would be a fresh take on tacos”. And it is grilling time so grilled steak it is. I used London broil here but you can use any cut you’d like. The trick with London broil is to let it marinate for a couple days so that it makes it really tender and grill it over low heat to prevent it from getting tough.

Now a true chimichurri sauce does not use this much vinegar but I wanted to break down the meat better and I put all of this in a blender to make really smooth to make a better marinade.
