We have definitely had some warmer temps sprinkled amongst the gloom the past few weeks and that called for the “Chopped salad” to make it’s weekly rotation back on our schedule.
Like I’ve said before and I tell my patients all the time, making meals doesn’t have to be hard. We over complicate it (I love to over complicate it most days) but this is one of our weekly staples for this time of the year because it’s super quick, easy and we always just like it.
Now the past 2 weeks I have been adding air fried chicken peas which I will share tomorrow. Don’t pass them by because they are sooo good as a crunchy salad topper or even a snack.
Now remember there is no recipe for the chopped salad. It’s literally just your favorite veggies chopped, add in your favorite grilled meat, a little sprinkle of cheese (if you like… but who doesn’t like cheese?!), a carb (if you want) and your favorite dressing. There is literally no wrong way to make this! Add it in to your dinner rotation for your super busy nights!
