Sweet corn is a favorite this time of year in our house. Last week Judd smoked a few pork butts so we had smoked pork to make all kinds of dinners. We decided that night to make nachos topped with the smoked pork, shredded cheese and this corn/veggie topping. It was soooo good! It would also be great on tacos, taco bowls, just as a side, or even in a salad for some extra flavor.
