So two weeks I was at Obesity Week in San Diego from 11/1-11/5. Thanks Judd for holding down the fort! And thank you to my fun co-workers for a really great time while still constantly learning and growing within obesity medicine!
So as I was trying to plan out this weeks meals I had zero good ideas and honestly didn’t even want to go to the store because I was a little jet lag and throw the time change in and I was all over the place! And being even more honest I was trying to even plan while flying back but nothing even jumped out to me.
Now here is where I had two options: order takeout all week and just wing it or go to my “go to meals”. These are not recipe based meals but more of a throw it all together. I have several of these meals, ones we use for quick nights or nights where we don’t feel like cooking.
So my “template” for these meals is : protein source, carb source, veggies and some fat. As you can see both of these meals are essentially the same “recipe” but by mixing up my “template” I have two very different tasting but easy dinners.
So think of what you can do for your “go to meals”. Meals you can throw together quickly and especially when you do not feel like cooking.
What are these two go-to meals?
Meal 1: grilled chicken, roasted delicata squash and asparagus topped with feta cheese
Meal 2: Italian sausage, leftover homemade mac and cheese and green beans
