Hazel LOVES Mac & cheese, in fact it is one of her 5 things she eats (she is the death of me). So when I announce I’m making this she goes “the Mac and cheese with the crackers on top?” And uses a hand to make it look like she crumbing the crackers. Hell she even has a Mac & cheese dance…
Now is this a healthy version of Mac & cheese? No, not at all. The only thing even slightly healthy is I use protein plus pasta because no one tastes the difference so why not.
I will start to share some of these favorite meals even if they are not “healthy”, but I will share them because they are family and friend favorites and enjoying good meals with family and friends is one of my favorite things. Remember anything can be eaten in moderation especially when you balance the rest of the meal.
BUT how do you include this as part of a balanced meal? We make sure we serve it with a protein (Judd’s smoked meatloaf- which is my favorite) and a side veggie, (garlic broccoli this time).
