So I had a fun new recipe tonight all planned to share with all of you.
Unfortunately my main ingredient decided to rot and I was not going to the store. This is where instead of a recipe tonight I have my back up plan tip to share.
We all have those nights where something happened and dinner isn’t going as planned. We have two options: 1. Get takeout 2. Make a “hodgepodge” dinner. Now I am not going to lie and say there haven’t been many a nights where I order takeout, but Friday night is typically takeout night and I don’t want takeout twice. AND being even more honest... I just don’t want to cook on Friday nights soooo that’s where “hodgepodge” dinner comes into play.
I literally look in the fridge/pantry and pull out what is needed to fit the major groups that I plan all meals around. The meal composition I follow is: protein, veggies, carbs and fat. So tonight this is what I dug out:
Protein: grilled chicken (now this is sort of cheating because this was intended to be part of my dinner idea tonight anyway)
Carbs: corn on the cob; grilled and cut off the cob
Veggies: radishes, red onion, tomatoes, cucumbers
Fat: feta and slivered almonds
Top with salad dressing of choice or can leave as is.
The takeaway is... keep some staples in your house for those nights you need a back up plan, it not only makes it quick and easy but will keep you on track.
