Texas caviar is typically a blend of beans and veggies with usually some sort of vinaigrette dressing. I thought this would be a great twist to turn it into a salad topping for a quick weeknight dinner.
try and make it the night before so it has time for the flavors to develop. Then just add the meat, cheese and mixed greens when ready to eat.
I used smoked shredded pork because we have it in the freezer but use any meat of choice or even grab a rotisserie chicken on the way home.
