Jessica’s Texas Caviar Salad

Texas caviar is typically a blend of beans and veggies with usually some sort of vinaigrette dressing. I thought this would be a great twist to turn it into a salad topping for a quick weeknight dinner.

  • try and make it the night before so it has time for the flavors to develop. Then just add the meat, cheese and mixed greens when ready to eat.

  • I used smoked shredded pork because we have it in the freezer but use any meat of choice or even grab a rotisserie chicken on the way home.
