I typically make some sort of eggs daily for Judd and I to take to work. Until last year I never microwaved an egg because it creeped me out then I tried my microwave egg scramble (listed in recipes as well- check it out) and realized that not only did it taste just fine but it made it easier to have other options. After I got over my own weird food aversion I started trying out new ideas. Then I also tried out adding cottage cheese (which also weirds me out but I will eat smooth in a scramble and honestly enjoy it).
This all lead me to try out the pre-made frozen scrambles for a change. While they were quick and easy, Judd and I didn’t care for the sausage in them and honestly they were expensive for what they were so here comes in to play my meal prep plan. I usually do a week at a time but you can prep these for a few weeks or even a month. And I have some other times saving tips below.
5 day breakfast scramble recipe: (makes 2 servings per bag, can also break in half to make 1 serving bags or can multiply to feed as many as needed)
Ingredients:
32oz frozen diced potatoes
20oz cooked meat and cooled (I go between turkey breakfast sausage and ham)
3 bell peppers; chopped *see note
1 large onion; chopped
When ready to cook:
4 eggs
1/2c cottage cheese
2oz cheese of choice
Directions:
cook and cool meat. (ham just needs to be chopped)
Dice veggies and place on sheet pan, freeze until frozen (this keeps them from sticking together).
In 5 gallon zip lock bags; distribute evenly the meat, veggies and potatoes. Eliminate air and seal. Store in freezer.
When ready to cook: over medium heat in a skillet, cook the scramble mixture until veggies are softened and potatoes cooked. Season with seasoning of choice. Then add 4 eggs blended with 1/2c cottage cheese and 2oz of cheese of choice.
Cook until scrambled and not as wet, the cottage cheese keeps these moist but you will notice when they tighten up.
serve or pack for the next day and microwave once ready to eat.
*time saving tips:
~ use frozen veggies instead of chopping your own, also can use any veggies of choice.
~use leftover meat- saves time and creates variety
