I have been on a skillet/sheet pan dinner kick lately. I love them because they are super quick and easy and who doesn’t love that?
Now I used pre-cooked gnocchis for this recipe but this sauce is so good over any pasta or even to be used in lasagna. So save it to use for a variety of meals. It is also a nice way to pack a lot of veggies in a sauce and the kids (and picky adults) won’t notice!
Time saving tip: use a food processor to chop the carrots, onions, garlic and pepper. It takes the prep time to almost non existent and make the veggies really small so it’ll cook quicker and overall has a nice texture in the end.
