The temperature the past couple weeks have been all over the place but there has definitely been some really warm days! It’s made me start wanting more of the lighter meals we tend to favor in the spring and summer.
This is a great meal, because it tastes better cold so it’s a great make ahead meal. And if you already have pre-cooked chicken then this is a super quick meal! I also made the quinoa head of time and cooled it so this came together super quickly.
*This would also be a great meal prep meal or great for eating when you do not have access to warm up a meal.
