Portuguese Rice

In 2010 I moved to Boston, not knowing a single soul but I always wanted to live there so I went for it.


Very soon after living there I met what would be one of my still best friends Monica. Her parents are off the boat Portuguese, so I got to experience their culture and their food! Her family took in me in just like one of their own while I lived out there. Her mom would make this rice and it was always one of my favorite things!


Now this is my interpretation not her exact recipe as she knows that by heart and probably doesn’t even have it written down. I did add chorizo to it to make it a full meal. They would use linguica, a spicy sausage similar to chorizo/andouille/hot Italian but unfortunately I have never seen it even close to where I live. But if you can find it- use it! It’s amazing!

If you go make sure to try her homemade cheese rolls- one of the things I miss the most and even dream about! Or any of her amazing breakfast and lunch meals! You will not leave disappointed.


Now the best part of this meal? It’s a one pan meal and is quick and easy!
