Queso Chicken

I think it is no surprise that I LOVE cheese, so why wouldn’t I love queso?! Now I do make a queso dip and that is anything but good for you but is soooo good! I decided to go a little lighter on this queso recipe. By using evaporated milk instead of regular milk this comes together even quicker.


The best part of this is you can use it as either the base of a meal or shred the chicken really fine and use as a dip. I served it over rice with sautéed peppers and onions (think burrito bowl).
