I haven’t posted much lately because we have been busy and I haven’t been creating any new recipes. More just ideas and quick “toss whatever I feel like together”.
This is also the main topic I have been having with patients. Meals do not need to be these well planned out recipes or even super cohesive. Just throw together some protein and in-season produce. I haven’t been meal planning, I’ve just been buying a variety of lean protein sources and a ton of in-season produce. Our garden is starting to spit out some veggies and I have going to the local veggie stand to buy whatever appeals to me. Then for dinner I’ve basically just cooked the protein and served with veggie sides.
A perfect example is this meal I made last night; pesto shrimp, roasted garlic green beans, and a tomato, mozzarella, red onion and pesto salad. It took less than 10 min to prep and tasted good for lunch today. I will keep sharing my “random” dinners to hopefully give you some quick ideas of what to eat during this hot and busy summer.
